RESTAURANT MORGAN
The Morgan restaurant gained a considerable reputation over a decade ago. This is the restaurant whose reputation is based on the game that is caught by the family members, and poultry which is raised within the Morgan property. Morgan's most famous dish is the „Crestine“: pasta filled with rooster's cockscombs. Morgan offers a whole list of game dishes, of which special attention is given to the rabbit with black polenta and quails in bacon.

We started Saturday's lunch with the most spectacular Istrian envelope of all time. The excellent waiter, who knows everything about every detail of Morgan's kitchen and wine cellar, brought us a tray of homemade mustard, all of which were very good, and those of quince and onion just brilliant.

The Istrian dream arises from love in its broadest sense. The love of a very connected family that has been seducing and surprising its loyal clientele for a long time, who over the years return to this simple but elegant restaurant to taste traditional and modern Istrian recipes. It is unbelievable that so many years have passed since 1998, when Darinka and Joško prepared the fire for the first dish baked under the baking lid (peka), when they prepared the first fuži (local homemade pasta) with rooster and gnocchi with venison. In the end, time itself decides and after all these years allows there still to be a desire to bring these tastes, feelings and enthusiasm for this simple cooking to the table where the main ingredients are history, effort and pride ... That pride is still noticeable in our son Marko and daughter Ana. They have certainly introduced innovation, new ways, new recipes with respect for ingredients and traditions, trying to find special wines and the most original ways to further elevate this simple but good Istrian cuisine. Knowing the location, tradition, tastes and magic of the place, the desire to develop was initiated, combining the traditional and modern, the local and international. The Morgan Restaurant aims to become synonymous with people who have a habit of returning, enchanted by the magic of the place and the quality provided there.

The philosophy of the Morgan restaurant is to only offer its guests dishes prepared with seasonal ingredients. The traditional recipes that our grandmothers once used, have been reinterpreted in a modern way. Therefore, during the autumn season, guests can taste a variety of dishes based on mushrooms, truffles and game (boar, roe deer, pheasant, woodcock, rabbit) and in the spring they can find irresistible asparagus, fresh cottage cheese and špaleta (pork shoulder) on oil, of course all served with homemade pasta.
